A fried calamari appetizer is photographed at Soul of Mexico on Thursday, December 10, 2009. The dish features calamari strips lightly breaded with seasoning and served with chipotle aioli. The family owned and operated restaurant opened in November 2007 at its location at Fred Waring and Jefferson in Indio.
