If you're in the east valley and the thought of making that long drive to Palm Springs is just too much for dinner, never fear.

Maracas has recently opened a second location on Dinah Shore Drive in Rancho Mirage.

What makes Maracas so special? One reason is owner Todd Flood and his team. Flood has been in the business for more than 30 years, working in everything from espresso bars to five-star restaurants. This time he has teamed up with Jack Srebnik, who owns The Slice next door, and Gerald Feldman.

Maracas specializes in Mexican cuisine, serving generous dishes at reasonable prices. As you walk in, you'll be greeted with wonderful aromas coming from the open kitchen, bright colors on the walls and a bar planted smack dab in the middle of the restaurant. Televisions are plentiful but not so intrusive that they drown out conversations.

If you like to make a meal out of appetizers, try the Santa Fe egg rolls ($8.95) filled with spicy marinated chicken, black beans, rice and roasted corn. Seafood fans will definitely find a friend in the Ceviche Del Mar. Tilapia, shrimp and scallops are marinated in a delightful blend of citrus and tomato juices and served layered over tostada shells.

Maracas is known for its sizzling fajitas. Choose the veggie version or get yours with chicken, steak or shrimp. Can't make up your mind? Go for the combination and eliminate the guesswork.

For a real treat, be sure to check out the "Especiales" on the menu. The grilled chicken Veracruz can't be beat. Tomatoes are simmered with capers, onions, bell peppers, mushrooms and spices to create an unforgettable taste sensation.

All of the Especiales come with two sides.

If you've been craving a juicy steak, go for the 14-ounce choice New York marinated and topped with an Argentinean Chimichurri sauce.

For anyone who likes to save time, combine your tequila with dinner and order the drunken salmon, which is marinated in tequila plus lime juice and topped with a Buerre Blanc sauce.
