When it comes to dining out, most of us don't like straying too far from home.

But if you'd like to break out of your dining rut, try the Blue Coyote Bar & Grill in Indio.

Owner Michelle Swaim, who happens to be the former manager of the Blue Coyote in Palm Springs, had a dream of opening another location at the other end of the valley. She used the original concept, but put her own spin on it.

Swaim conceived the entire floor plan, including the exceptional bar area, which boasts three large televisions and is the perfect place to kick back, order a Wild Coyote margarita and watch your favorite sporting events. Or swing by on Friday nights from 6 to 10 p.m. and enjoy live entertainment and dancing in the bar.

Bargain priced Happy Hour specials are served daily from 3 to 6 p.m. A crowd favorite is the Spinach Quesadilla ($8.95), made with cilantro flour tortillas, hot, melting jack cheese that oozes out the sides, fresh spinach, mushrooms and chipotle yogurt sauce. Served hot off the grill and topped with guacamole and sour cream, it goes great with a cold, frosty beer. Order it later in the evening and it will cost you $11.95. Still a great price, but if you can drop by a little earlier and save three bucks, why not?

Other Happy Hour deals include a generous half order of Chicken or Steak Fajitas for $7.95. For those of you who really want to party, spend an extra buck and order yours with shrimp. Or how about a sizzling order of carnitas for $10.95?

Those of you looking for something a little lighter can feast on one of Blue Coyote's new salad selections. Order the Chopped Salad del Sol, piled high with chicken, avocado, tomatoes, feta cheese, bacon, egg and fiesta strips — only $8.95 during Happy Hour vs. $14.95 at dinner.

Don't think that the deals end with the food. From 3 to 6 p.m. daily, take advantage of the reduced beer prices ($3 domestic or $4 for imports). A glass of house wine is $5.

With Mother's Day only a few weeks away, keep Blue Coyote in mind. Outdoor dining is available on the spacious patio complete with twinkle lights. If your mom isn't into hot and spicy, no worries. Blue Coyote has an amazing menu whether she likes her food on the mild side or muy caliente.
