Anyone who knows anything about barbecue knows there is more involved than just pushing that little button on the gas grill.
Passion is the No. 1 ingredient when it comes to mastering the art of smoke, spice, and low 'n' slow cooking.
The Cowboy Way in Palm Springs rustles up some of the best barbecue in the valley. The focus is on the food, not fancy décor or table settings. In fact, there are no tables — just a wrap-around counter, built-in stools and big portions. As owner Daniel Placencia says, "I don't do anything fancy."
Placencia is an award-winning BBQ champ who had an impressive booth at the Stagecoach Country Music Festival.
Ride on over for lunch and enjoy a jaw-dropping pulled pork sandwich ($7.95). Slow cooked and blended with Cowboy's homemade BBQ sauce, it's topped with shredded cabbage and served on a roll that soaks up every drop.
Or try the Cow Poke (tri-tip) or the Holey Smokes (brisket). Every bite is so tender and juicy that you will probably have enough leftover to take home for dinner. All sandwiches come with your choice of corn bread, potato salad, ranch beans, Kansas City slaw or stick-to-your-ribs Mac 'N Cheese.
The Cowboy chili is made with savory chunks of pork and enough heat to make it spicy without taking your head off. Or if you prefer a vegetarian version, order the Cowgirl chili ($8.95) loaded with bold flavor. Each comes with your choice of two sides.
People like to say that ribs done right fall off the bone. At The Cowboy Way, the meat jumps off. Get your bib ready and savor baby-back or spare ribs with special sauce.
Specials include a half chicken or half rack of ribs, plus two sides, for $28.95.
For dessert, try the bread pudding and sweet potato pie.
